located in Tokyo Station, somewhat reminds us of the flavor of the Showa times. It is a very simple traditional shoyu (soy sauce based) ramen that is very popular for the locals. The mildly prepared soup that contains dried sardines, pork and chicken bones, seaweed, and vegetables with the flavored oil has something inexplicable but unbelievably deep that it surprises you with every sip. The hardness of the noodles well blended with the soup and the chashu pork is a perfect al dente which you can feel the fine chewy texture. Enjoy the Shinasoba Noukou Shoyu flavor when you ever had a chance to come to Kujiraken in Tokyo Station!

Tamahide in Nihonbashi Ningyocho has a perpetual line out its front door, regardless if it is a weekday or holiday. Its signature dish, oyakodon, literally mother and child, is bite-size pieces of chicken mixed with scrambled eggs and a sweet sauce. The chicken is cooked and then added to the eggs which is then just given some heat to start to set and this is poured over a hot bowl of rice.

Hiyama is renowned for its wagyu for sukiyaki, shabu shabu, or for steaks. Next door to the restaurant is a retail shop selling the gorgeously marbled Japanese beef. Pricey, but worth having once in your life.

Comment from a GUEST: A pleasantly old-fashioned part of Tokyo. It is a small shop with a zashiki area, where you take off your shoes and sit on tatami mats, but it’s a quiet evening and most of the early customers seem to prefer to sit by the counter, where you can watch the chefs deftly turning the chicken skewers over special charcoal brought all the way from Wakayama. So do we.
